This savory ground beef, zucchini, and cheese skillet is my wife’s absolute favorite! Packed with flavorful beef, tender vegetables, and gooey melted cheese, this dish is sure to be a hit with the whole family.

Ingredients:
- 1 lb lean ground beef
- 1 medium sweet onion, finely diced
- 1 (14.5 oz) can Italian-style stewed tomatoes
- 1 (8 oz) package sliced white mushrooms
- 1 (6.5 oz) can tomato sauce
- 1 (6 oz) can sliced black olives
- 2 cloves garlic, minced
- Salt & ground white pepper, to taste
- 4 medium zucchini
- 1 (8 oz) package shredded sharp Cheddar cheese
Instructions:
1️⃣ Brown the Beef & Onion:
Heat a large skillet over medium-high heat. Cook and stir the ground beef and onion until the beef is browned and crumbly, and the onion is soft (about 5-7 minutes). Drain excess grease.
2️⃣ Simmer the Sauce:
Crush the stewed tomatoes into smaller pieces in a bowl, then pour them into the skillet. Stir in the mushrooms, tomato sauce, olives, garlic, salt, and pepper. Simmer uncovered for 20-30 minutes, allowing the liquid to reduce.
3️⃣ Add the Zucchini:
Slice zucchini lengthwise, then cut crosswise into ½-inch slices. Stir into the beef mixture, cover, and cook until the zucchini is firm yet tender (about 5-7 minutes).
4️⃣ Melt the Cheese & Serve:
Sprinkle shredded Cheddar cheese over the mixture, cover, and cook until melted (about 3-4 minutes).
